Turska basbusa / Tourkish basbousa


Sastojci (za kalup 30 x 24 cm):

2 šalice griza
100 g kokosovog brašna
1 žličica cimeta u prahu
1 vrećica vanilinog šećera
3 žličice praška za pecivo
1 čaša biljnog mlijeka
200 g veganskog margarina
bademi ili orasi za ukras

za sirup:
1 šalica šećera
1 šalica vode
1 žlica soka od limuna

Priprema:
  1. U posudu stavite griz, kokosovo brašno, cimet u prahu i vanilin šećer i sve dobro izmiješajte.
  2. Dodajte mlijeko i margarin te sve dobro izmijesite rukom dok ne dobijete ljepljivu smjesu.
  3. Bademe zalijte vrelom vodom i nakon cca. 10 minuta skinite im koricu. Ako koristite orahe koricu ne morate skidati.
  4. Na dno kalupa stavite papir za pečenje. Smjesu stavite u kalup i izravnajte.
  5. Kolac narežite na kockice ili rombove. Zahvaljujući tome kasnije ćete ga moći jako lako podijeliti na komade. U sredinu svake kockice stavite badem ili orah.
  6. Kolač pecite cca. 45 minuta na 180 stupnjeva.
  7. Sada pripremite sirup. Na vatri rastopite šećer u vodi i dodajte sok od limuna. Pustite da se ohladi.
  8. Izvadite kolač iz pećnice te ga prolijte ohlađenim sirupom. Na početku će izgledati da ima previše tekućine no pustite da kolač upije ostatak.
  9. Na kraju pospite kolač kokosovim brašnom.

Ingredients (for 30 x 24 cm form):

2 cups of farina (milled wheat)
100 g finely shredded coconut
1 tsp cinnamon
1 bag of vanilla sugar
3 tsp baking powder
1 cup of plant milk
200 g vegan margarine
almonds or walnuts for decoration

for sirup:
1 cup of sugar
1 cup of water
1 tbsp of lemon juice

Preparation:
  1. Place the farina, shredded cocontu, cinnamon and vanilla sugar into a bowl and mix well.
  2. Add the milk and margarine and knead until all ingredients are well blended and you get a sticky mixture.
  3. Cover the almonds with boiling water and after cca. 10 minutes take off the skin. If you're using walnuts you can leave the skin on.
  4. Put baking paper into the form. Place the mixture in the form and even out.
  5. Cut the cake into cubes or into diamonds. Later on it will be very easy to split it into portions. Place one almond or walnut in the middle of each cube or diamond.
  6. Bake the cake for cca. 45 minutes in 180 degrees Celsius.
  7. Now prepare the sirup. Melt the sugar in water on heat and add the lemon juice. Leave aside to cool down.
  8. Take the cake out of the oven and pour the sirup over it. At the beginning it will seem that there is too much liquid but leave the cake to soak in the rest.
  9. At the end sprinkle the cake with pieces of shredded coconut.

Tofu-feta sir / Tofu-feta cheese


Sastojci:

200 g običnog tofua
1/2 šalice maslinovog ulja
1/3 šalice bijelog vinskog octa
1/2 žličice origana
1/2 žličice bosiljka
1/8 žličica ljute papričice u prahu
sol po želji
1 žličica kapara (opcionalno)

Priprema:
  1. Tofu osušite s kuhinjskim ubrusom i narežite ga na kockice.
  2. U posudi ili staklenki izmiješajte maslinovo ulje, ocat i sve začine.
  3. Dodajte tofu i kapare (opcionalno). Izmiješajte da tofu bude ravnomjerno pokriven sa začinima.
  4. Stavite staklenku u hladnjak na cca. 10-12 sati. Poslužite kao prilog ili u grčkoj salati.

Ingredients:

200 g plain tofu
1/2 cup olive oil
1/3 cup white wine vinegar
1/2 tsp oregano
1/2 tsp basil
1/8 tsp chili powder
salt to taste
1 tsp of capers (optionally)

Preparation:
  1. Dry the tofu with a paper towel and cut it into cubes.
  2. In a bowl or a jar mix the olive oil, vinegar and all the spices.
  3. Add tofu and capers (optionally). Mix everything well so that tofu is equally covered with the spices.
  4. Refrigerate for ca. 10-12 hours. Serve as a side dish or on a Greek salad.

Juha od crvene leće i povrća / Red lentil vegetable soup



Sastojci:

1 šalica crvene leće
1/2 cvjetače
1/2 kelja
1 veliki luk
4 mrkve
1 veliki slatki krumpir (batat)
1 žlica mljevenog rimskog kumina
1 žlica mljevenog muškatnog oraščića
1 žlica mljevene piskavice
3 žlice delikatesnog sušenog kvasca
1/4 žličice chilija u prahu
sol i papar po želji

Priprema:
  1. Narežite luk i mrkvu te ih u velikom loncu zajedno spržite na ulju.
  2. Narežite cvjetaču i kelj na komadiće. Crvenu leću operite u hladnoj vodi. Cvjetaču, kelj, leću i sve začine dodajte u lonac te pokrijte s vrelom vodom.
  3. Nakon cca. 10 minuta dodajte slatki krumpir narezani na kockice te kuhajte još cca. 10-15 minuta. Po potrebi dodajte još malo vode.

Ingredients:

1 cup of red lentils
1/2 cauliflower
1/2 savoy cabbage
1 large onion
4 carrots
1 sweet potatoe
1 tbsp ground cumin 
1 tbsp ground nutmeg
1 tbsp ground fenugreek
3 tbsp nutritional yeast
1/4 tsp chili pepper
salt and pepper to taste

Preparation:
  1. Cut the onion and carrot. Put some oil in a large pot and fry them.
  2. Cut the cauliflower and savoy cabbage into pieces. Wash the red lentils in cold water. Add the cauliflower, cabbage, lentils and all spices into the pot and cover with boiling water.
  3. After ca. 10 minutes of cooking add the sweet potatoes cut into cubes and cook for ca. 10-15 minutes more.

Salata od boba i avokada / Broad beans and avocado salad


Sastojci:

300 g boba
1 avokado
1 velika rajčica
5-6 sušenih rajčica
1/4 srebrnog luka
bučino ulje
peršin po želji
sol i papar po želji

Priprema:
  1. Bob skuhajte, ohladite i ogulite.
  2. Avokado, rajčicu i sušene rajčice narežite na komade. Nasjeckajte peršin.
  3. Izmiješajte sve sastojke. Dodajte bučino ulje i sol i papar.

Ingredients:

300 g broad beans
1 avocado
1 large tomatoe
5-6 sundried tomatoes
1/4 white onion
pumpkin seed oil
parsley
salt and pepper to taste

Preparation:
  1. Cook, cool down and peel the broad beans.
  2. Cut the avocado, tomatoe and sundried tomatoes into pieces. Chop up the parsley.
  3. Mix all the ingredients. Add pumpkin seed oil and salt and pepper.

Kolač sa šljivama / Plum cake


Sastojci (za kalup 24 x 26 cm):

3,5 šalice brašna
1 šalica šećera
1 vrećica praška za pecivo (12 g)
0,5 šalice ulja
0,5 šalice vode
1,5 šalice gaziranog pića s okusom naranče
3 žlice jabučnog octa
1 žličica arome od vanilije
cca. 1 kg šljiva

Priprema:
  1. U posudi izmiješajte brašno, šećer i prašak za pecivo.
  2. Dodajte ulje, vodu i gazirano piće i izmiksajte štapnim mikserom. Na kraju dodajte jabučni ocat i aromu od vanilije te još jednom izmiksajte. Stavite smjesu u kalup.
  3. Operite šljive, narežite ih na polovice i izvadite koštice. Stavite ih na vrh kolača.
  4. Pecite cca. sat vremena na 180 stupnjeva. Pustite kolač u otvorenoj pećnici da se polako ohladi.

Ingredients (for 24 x 26 cm form):

3,5 cups of wheat flour
1 cup of sugar
1 bag of baking powder (12 g)
0,5 cup of cooking oil
0,5 cup of water
1,5 cup of orange-flavoured carbonated soft drink
3 tbsp of apple cider vinegar
1 tsp of vanilla extract
ca. 1 kg of plums

Preparation:
  1. Mix flour, sugar and baking powder in a bowl.
  2. Add cooking oil, water and carbonated soft drink and blend everything with hand blender. At the end add apple cider vinegar and vanilla extract and blend once again. Transfer the mixture into the form.
  3. Wash the plums, cut them in halves and take out the stones. Put them on top of the cake.
  4. Bake for ca. 1 hour in 180 degrees Celsius. Leave the cake in open oven to cool down slowly.

Brownie od banana / Banana brownie

Sastojci (za kalup 30x30 cm):

250 g čokolade za kuhanje
2/3 čaše ulja
1 šalica sećera
3 veće zrele banane
1/2 čaše biljnog mlijeka
1 i 1/2 šalice pšeničnog brašna
1 ravna žličica praška za pecivo
200 g oraha

Priprema:
  1. Čokoladu rastopite u ulju u vodenoj kupki i pustite da se malo ohladi.
  2. Banane, mlijeko i šećer stavite u posudu i izmiksajte štapnim mikserom.
  3. Dodajte čokoladu i dobro izmiješajte. Nakon toga dodajte brašno i prašak za pecivo i sve dobro izmiksajte.
  4. Na kraju dodajte orahe nasjeckane na manje komadiće i još jednom izmiješajte.
  5. Stavite smjesu u kalup i pecite 35-40 minuta na 200 stupnjeva.

Ingredients (for form 30x30 cm):

250 g of dark chocolate
2/3 glass of oil
1 glass of sugar
3 large ripe bananas
0,5 glass of plant milk
1,5 glass of wheat flour
1 flat tsp of baking powder
200 g of walnuts

Preparation:
  1. Melt the chocolate with oil in a bain-marie. Leave aside to cool down.
  2. Place banans, milk and sugar in a bowl and blend with hand blender.
  3. Add chocolate and mix well. Add flour and baking powder and mix once again until smooth.
  4. At the end add chopped up walnuts and mix once more.
  5. Pour the mixture into a form and bake for 35-40 minutes in 200 degrees Celsius.

"Riblji" štapići / "Fish" fingers

























Sastojci (za cca. 22 štapića):

2 šalice suhog prosa
4 limenke bijelog graha
2 luka
5 listova Nori alga (15 g)
3 vrhom pune žlice delikatesnog sušenog kvasca
1 vrhom puna žlica dimljene slatke paprike
sol i papar po želji

Priprema:
  1. Proso zalijte s 4 šalice vrele vode, dodajte sol i kuhajte poklopljeno na tihoj vatri dok ne upije cijelu vodu. Pustite da se ohladi.
  2. Iscijedite grah, stavite ga u veću posudu i izmiksajte sa štapnim mikserom.
  3. Luk sitno narežite, spržite ga na ulju dok ne dobije zlatno-smeđu boju i dodajte u posudu s grahom.
  4. Listove Nori alga narežite sa škaricama na sitne komadiće i dodajte u istu posudu.
  5. Dodajte sve začine i proso i sve još jednom izmiksajte sa štapnim mikserom.
  6. Smjesu još jednom dobro izmiješajte rukom. Formirajte štapiće te ih spržite na ulju na srednjoj vatri.

Ingredients (for ca. 22 fingers):

2 cups of dry millet
4 cans of white beans
2 onions
5 Nori sheets (15 g)
3 full tbsp of nutritional yeast flakes
1 full tbsp of smoked sweet paprika
salt and pepper

Preparation:
  1. Put the millet in 4 cups of boiling water, add a little salt, cover it and cook until all water is absorbed. Leave aside to cool down.
  2. Drain the beans, place them in a larger bowl and mash them with hand blender.
  3. Finely chop the onion, fry it on oil until golden brown and then add it to the beans.
  4. Use scissors to cut the Nori sheets into tiny pieces and add them into the bowl.
  5. Add all spices and millet and once again mash everything with hand blender.
  6. Mix it once more with your hand. Form the "fish" fingers and fry them on medium heat on both sides until golden brown.

Tiramisu


Sastojci (za kalup promjera 26 cm):

donji dio
200 g badema
3/4 šalice sjemenki suncokreta
150 g datulja bez koštica
4-5 žlica Amaretta
1 žlica mljevene kave
1 žlica kakaa

krema
1 i 1/2 šalice prosene kaše
3 šalice biljnog mlijeka s okusom vanilije
prstohvat soli
2 kokosova mlijeka od 400 ml (samo tvrdi dio)
1 žličica arome od vanilije
cca. 150-200 ml sirupa od agave
sok od 1/2 limuna

+ 3 žlice instant kave i 3 žlice karube za pokrivanje vrha kolača

Priprema:
  1. Datulje zalijte vrelom vodom i pustite cca. 15 minuta da omekšaju.
  2. Sve sastojke za donji dio stavite u blender i izmiksajte u ljepljivu smjesu.
  3. Smjesu stavite na dno kalupa za tortu, pritisnite i izravnajte i sve zajedno stavite u hladnjak.
  4. Kokosovo mlijeko pustite u hladnjaku preko noći da se odvoji voda od tvrdog dijela.
  5. Prosenu kašu skuhajte u biljnom mlijeku uz prstohvat soli.
  6. Pustite da se kaša kratko ohladi. Stavite je u blender, dodajte ostale sastojke i izmiksajte u glatku kremastu smjesu.
  7. Smjesu stavite u kalup i zatim u hladnjak da se stvrdne i ohladi.
  8. Vrh torte pospite smrvljenom instant kavom izmiješanom s karubom.

Ingredients (for cake form with diameter of 26 cm):

for base

200 g of almonds
3/4 glass of sunflower seeds
150 g of dates without seeds
4-5 tbsp of Amaretto
1 tbsp of ground coffee
1 tbsp of cocoa

for cream
1 and 1/2 glasses of dry millet
3 glasses of vanilla flavoured plant milk
pinch of salt
2 pcs. 400 ml cans of coconut milkk (only the solid part - leave the cans in the fridge overnight)
1 tsp of vanilla extract
cca. 150-200 ml of agave sirup
juice from 1/2 a lemon

+ 3 tbsp of instant coffee and 3 tbsp of carob for topping

Preparation:
  1. Cover the dates with hot water and leave for cca. 15 minutes to soften.
  2. Put all the ingredients for the base into food processor and blend them into a sticky dough.
  3. Put the dough on the bottom of the form, even it out with your hand or a spoon and put the form into the refrigerator.
  4. Cook the millet in the milk along with a pinch of salt.
  5. Leave the millet to cool down a bit and then put it in the food processor blender, add all the other ingredients for the cream and blend until it smooth and creamy.
  6. Transfer the cream into the form and put it in the refrigerator until it cools down and hardens.
  7. Mix the instant coffee with carob and cover the top of the cake.
